Memories of ANZAC Day

How do you spend Anzac Day? I grew up in a small country town where everyone gathered if you weren’t marching you were there to support.

As part of the day’s activities as young children we would head up to our Grandparents for morning tea.

Gran would help us make a batch of Anzac biscuits and we would all sit around their 12 seater dining table and snack of the biscuits and cordial.

Gran’s ANZAC Biscuit Recipe

Ingredients

4 ounces of butter

1 tablespoon golden syrup

2 tablespoons boiling water

1 teaspoons of bi-carb coda

1 cup rolled oats

1 cup coconut

1 cup plain flour

1 cup sugar

Method

Mix butter and golden syrup over low heat.

Add boiling water and bi-carb soda.

Pour into mixed dry ingredients and blend well.

Roll mixture into small balls and place on to greased trays.

Bake in 150oC oven for 20 minutes.

Cool on tray.

Store in an airtight container (OXO Pop range would be perfect) when completely cool.
